Bruschetta With Raspberry Brown Sugar Reduction





Bruschetta is one of my most favorite appetizers. Or in this case tonight, It was my main meal. It's all I needed and you will see why.
 

I love that making Bruschetta is very inexpensive, there's not much to the ingredients, but they mix so well together. Plus It makes a great dish when having a group of people around.


Ingredients
Yellow Grape Tomatoes
Red Onion
1 Peach
1 Clove Garlic (More if you love Garlic)
2 (1) Tbsp Olive Oil
Fresh Basil, 3 or 4 Leaves
Baguette
Fresh Mozzarella or Feta
Pepper (optional)
Raspberry Brown Sugar Reduction
Hot Ranch Sauce (Ranch Dressing with a few drops of Sambal)




Instructions
I started by making the "Raspberry Brown Sugar Reduction", it is only 1 part Raspberry Flavored Balsamic Vinegar & 1 part Brown Sugar. Whisk together in a saucepan and bring to a boil. Boil for 3 or 4 minutes then remove from heat and pour the Reduction into a bowl. It will thicken nicely by the time your ready to use it.
Preheat the oven to 375F. Slice the Baguette in whichever shape or size you wish and lay it out on a baking sheet. Halve the Tomatoes, Dice the Onion and Chop the Peach & Basil. Next in a hot saucepan add the Olive Oil. With a garlic press, press the Garlic into the pan. Add the Onion and Peach until the Onion cooks through, but doesn’t brown. When its done, leave off heat, add the tomatoes and basil and give it a good mix.

Scoop the mixture out of the pan and spread on top of the Baguette slices. Then add some fresh mozzarella cheese to the top. I added some fresh pepper over top that (But if you don't like pepper its up to you) I then tossed it in the oven for 6 or 7 Minuets and it was done.

Mozzarella cheese doesn’t have the flavor that Feta would. But my bruschetta medley had flavor to spare, so it complimented nicely with the Raspberry Brown Sugar Reduction.

I should say almost done. I then drizzled the Raspberry Reduction and a hot ranch overtop. Now Its Done!
